Pumpkin Desert Bars with Collagen Icing Recipe

There's no better way to embrace the season than by indulging in our delectable Pumpkin Bars with Collagen Icing, a delightful and nourishing treat!



Ingredients:


For the Pumpkin Bars:

  • 1 cup canned pumpkin puree

  • 1 cup coconut sugar*

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon salt

For the Collagen Icing:

  • 1 cup powdered sugar

  • 1 scoop (about 10g) unflavored collagen powder

  • 2-3 tablespoons milk (adjust for desired consistency)

  • 1/2 teaspoon vanilla extract


Instructions:


For the Pumpkin Bars:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

  2. In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, and eggs. Mix well until the ingredients are thoroughly combined.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt.

  4. Gradually add the dry ingredients to the pumpkin mixture and stir until the batter is smooth.

  5. Pour the batter into the prepared baking pan and spread it out evenly.

  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the pumpkin bars to cool completely in the pan before icing.

For the Collagen Icing:

  1. In a bowl, combine the powdered sugar, unflavored collagen powder, milk, and vanilla extract. Start with 2 tablespoons of milk and add more as needed to achieve your desired icing consistency. Mix until the icing is smooth.

  2. Once the pumpkin bars have cooled, drizzle the collagen icing over the top. You can use a spoon or a piping bag for a more decorative effect.

  3. Let the icing set for a few minutes before cutting the bars into squares or rectangles.
